Yellow curries utilize one of the mildest of Thai curry pastes, showing the influence of Indian-style seasonings like turmeric and curry powder but still retaining the distinctly sweet-sour-savory-spicy balance of flavors that all Thai curries are famous for. In this creamy and comforting version, sweet shrimp are briefly simmered in a creamy sauce along with carrot and red bell pepper, served over steamed jasmine rice with fresh cilantro.
