Rather than the traditional Mexican tomato-based sauce found on most enchiladas rojos, these farmstead cheese-stuffed parcels are smothered with a bright and subtly smoky gravy made from ancho and guajillo chiles and topped with Mountain Girl Pickle's local corn relish. To offset the richness of the cheese, these enchiladas are served with a light green salad.
