In the canon of American comfort food, not much compares to the humble but absolutely delicious pot pie, filled with tender shredded chicken swimming in a rich, creamy gravy packed with carrots, potatoes, peas, and herbs. Our version forgoes the classic pie crust for a much less fussy topping of herb-flecked buttermilk biscuits.
