Throughout the Middle East, hollowed-out vegetables stuffed with mixtures of spiced meat and grain and gently braised in a light tomato broth to comforting tenderness make for a beloved meal - ours feature the traditional Palestinian flavors of fresh dill and warm spices. While eggplants and summer squash are popular, stuffing sweet bell peppers cut down on tricky prep time. Serve these peppers with a light salad and, perhaps, some good bread.
